Chocolate Cake Recipe (by popular demand)

Should have posted this with the pictures of the cake, but for all those who drooled over the chocolate cake pictures, here's the recipe:

Funny thing, this cookbook is about low fat cooking but this recipe is tucked in at the back.  Under the nutritional label at the bottom it says:

FOR CAKES:
Preheat oven to 350
Lightly grease bottom and sides of 3 X 9" round cake pans
Cut circles of wax paper on parchment paper to fit bottom of pans
Combine in large bowl:
-3 cups of granulated sugar
-2 1/2 cups of white flour
-1 cup of unsweetened cocoa powder
-2 tsp of baking soda
-1 tsp of baking powder
-1 tsp salt
[In another large bowl beat] 3 large eggs for 3 minutes until thickened and slightly lemon colored
Add:
-1 1/2 cup buttermilk
-1 cup of strong brewed coffee that is cooled
-3/4 cup of vegetable oil
-1 tsp vanilla
-4 oz of unsweetened chocolate squares- melted and cooled slightly
Mix above on low speed until well blended
Gradually add dry ingredients to wet and mix on medium speed until batter smooth
Divide evenly among 3 pans and bake for 25-30 min until toothpick inserted in centre of cakes comes out clean
Cool pans on wire racks for 10 minutes, then remove from pans and allow to cool completely before frosting


FOR FROSTING:
Whisk together in a medium saucepan:
-1 1/4 cups of granulated white sugar
-1/3 cups of cocoa powder
-1 cup of whipping cream
Cook slowly over medium heat, whisking constantly until mixture comes to gentle boil
Cook 1 min
Remove from heat and stir in chocolate until melted
Stir in vanilla
Let cool to room temperature
[In a large bowl beat]:
-1 pkg cream cheese, softened and
-1 cup butter, softened
Beat on high speed until smooth
Add cooled chocolate mixture and beat on medium speed until well blended
Refrigerate frosting until desired spreading consistency- about 1 hour
*Important not to let it get too firm or you won't be able to frost it!


FINALLY:
Frost between layers of cake and all around
Cover and refrigerate
Let cake stand at room temp for 30 minutes before serving
*Freezes really well
